Chocolate Chip Blondies

Equipment

  • Set of 3 Cooling Rack

Ingredients

  • 1 cup unsalted butter room temperature
  • 1/2 Cup Sugar
  • 1 Cup Brown Sugar
  • 3 eggs room temperature
  • 1 tsp Vanilla Extract
  • 3/4 Cups All-Purpose Flour
  • 2 tbsp Corn Starch 
  • 1/2 tsp salt
  • 1/4 cup Baking powder
  • 1 Cup Dark Chocolate Chips

Instructions

  1. Preheat the oven to 350F
  2. Grease a square pan. Line the pan with parchment paper.
  3. In a stand-up mixer beat the butter until fluffy. Add the sugar and brown sugar and continue until incorporated. 
  4. Add the eggs and beat until well incorporated. Add the vanilla extract, flour, baking powder, and cornstarch. Whisk until everything is well incorporated and you don't see any lumps.
  5. Transfer the batter to the baking pan and flatten with the spatula. Bake for about 20 - 25 minutes. To check the doneness, insert a toothpick in the middle of the mix. If it comes out clean, you are good to go.
  6. Place the blondie on a cooling rack until they reach room temperature. Keep it in the fridge if not enjoying it right away. 

Gluten-Free & Plant-Based Options

Notes: For Gluten-Free blondies use the blend below instead of the all-purpose flour. Mix the ingredients before you add them to the mix. 

  • 1 ⅓ Cup Chickpea Flour 
  • ¾ Cup Almond Flour
  • ¼ Cup Potato Starch 
  • 1 tbsp Baking Powder
  • ½ Tsp Salt 
  • ½ tsp Xanthan Gum 

To make this recipe plant-based use vegan butter and instead of eggs use bananas.
