  • Ground cloves (a pinch)
  • Kosher salt (a pinch)
  • 1 teaspoon pure vanilla extract

For Cream Puffs:

  • 6 tablespoons unsalted butter, in pieces
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon

For Decorating:

  • Melted dark chocolate
  • Nonpareils
  • Small round red candies for the nose
  • Vanilla buttercream

Directions:

  5. Return the saucepan to medium heat and cook, stirring constantly, until the dough pulls away from the sides of the pan. Transfer the dough to a bowl and let it cool slightly. Beat in the eggs, one at a time, until the dough is smooth and shiny.

  6. Spoon the dough into a resealable bag and pipe 1-inch mounds onto parchment-lined baking sheets. Bake for 20 to 25 minutes until golden brown. Cool completely on the baking sheets.

  7. Fill the cooled cream puffs with the chilled pastry cream by piping it into the center from the bottom.

  8. Create reindeer decorations by piping melted dark chocolate onto silicone baking mats or parchment paper for antlers. Use melted milk chocolate to decorate the tops as reindeer heads and eyes. Add white nonpareils for spots and small round candies for noses.
