Ingredients:
Dough:
- 2 3/4 cups All-Purpose Flour
- 1/4 cup Dry milk
- 3 tablespoons granulated sugar
- 1 1/4 teaspoons salt
- 1 tablespoon instant yeast
- 4 small eggs
- 1/4 cup lukewarm water
- 1 lemon zest
- 8 tablespoons unsalted butter
Filling:
- 2 tablespoons Blueberry Powder
- 1 cup confectioners' sugar
- Half an 8-ounce package of cream cheese
- 3 tablespoons unsalted butter
- 2 teaspoons lemon juice
Instructions:
- Combine all the ingredients in a stand mixer or bread machine and mix until a smooth and shiny dough forms. Mix for 25 minutes if using a stand mixer at medium speed.
- Once the dough is well developed, transfer it to a bowl, cover it, and let it rise for 2 hours. Afterward, refrigerate the dough for 3 hours.
- For the filling, whisk together the blueberry powder, and confectioners' sugar.
- In a mixing bowl, beat the cream cheese and butter at low speed until they are smooth. Add the blueberry mixture and mix for 30 seconds, then incorporate the lemon juice. Cover the filling and set it aside for later use.
- For Shaping the buns: Roll the chilled dough into a 12" x 18" rectangle. Spread the filling on the bottom half of the dough. Fold and seal the dough, then cut it into 12 strips. Roll each strip and place them in the prepared pan, cut side up.
- Let the buns rise until puffy, around 1 1/2 hours. Preheat the oven to 350°F. Bake the buns for 23 to 25 minutes until golden brown. Cool them in the pan for 15 minutes before transferring to a rack.
- To make the glaze: Melt lemon chips in the microwave, adding cream if needed for a pourable consistency. Drizzle the glaze over the cooled buns.
