Find the right cake pan
- Square Pan 8": 8 x 8 x 2" inside, 0.5 mm carbon steel, oven safe up to 450°F. Ideal for brownies, blondies, cornbread and snack cakes.
- Fluted tube pans: 9" heavy-gauge cast aluminum with a two-layer nonstick coating, for crisp, detailed cakes.
- Mini fluted pans: bake four individual cakes at once.
- Round layer pans: two 9.4" round pans come in the 9-piece Diamond Texture set.
Pan size tip
A recipe written for one 9 x 13" pan fits two 8" square pans. Start checking about 10 minutes early, because smaller pans bake faster.

How do I keep a cake from sticking?
Even with nonstick, a light coat of butter or baking spray and a dusting of flour helps, especially in detailed fluted pans. Let the cake cool for about 10 minutes before turning it out.
